The kitchen still turns out sashimi and nigiri using high-grade fish, but the menu leans just as hard into ramen, Japanese curry, robata-grilled skewers, and fried small plates meant to be eaten alongside drinks rather than in isolation. That mix of refined technique and casual, food-forward drinking culture is what distinguishes Izakaya Carbondale from other Japanese restaurants in the valley.
Izakaya Carbondale was opened by the team behind Kenichi Aspen, drawing on more than three decades of that restaurant’s sushi and sashimi expertise while intentionally building something looser and more neighborhood-oriented for the downvalley community. The restaurant’s interior centers on a post and beam structure built from reclaimed oak more than a century old, sourced from a Midwest Amish crew and reassembled on site, with the same timber later shaped into the sushi bar, liquor bar, and dining tables. Chef Pablo leads the kitchen, developing a menu described by ownership as simple, sublime, and seasonal, pulling in Japanese sakana traditions, the hot dishes historically paired with drinking, alongside Kenichi’s classic sashimi preparations.
Izakaya Carbondale is open for dinner and runs a regular happy hour, with takeout available for guests who prefer to eat off site. The menu accommodates vegetarian, vegan, and gluten-free diners.
