PARC Aspen is an American fine dining restaurant and wine bar located open for dinner service Wednesday through Sunday starting at 5:00 PM. The restaurant was created by Maryanne and Harley Sefton, who despite having no prior hospitality experience were driven by a passion to preserve the local identity of Aspen’s dining scene. The seasonally inspired menu at PARC Aspen showcases locally sourced ingredients from nearby farms and artisans, reflecting a commitment to sustainability and farm-to-table dining principles.

Signature dishes include cast iron steaks, organic salmon, and smoked elk loin, with the menu evolving throughout the year to highlight Colorado’s seasonal offerings. The dinner menu features fresh seafood, prime steak, and Rocky Mountain specialties prepared with modern culinary techniques and thoughtful presentation. A separate bar menu provides approachable options like steak frites and roasted chicken, designed for casual dining and social hours. The restaurant accommodates dietary preferences with vegetarian, vegan, and gluten-free options available, and takeout service is offered for guest convenience.

PARC Aspen’s wine program features over 1,300 carefully curated selections spanning Old and New World vintages, including renowned Champagne houses, celebrated Bordeaux and Burgundy wines, classic Rhône selections, and standout bottles from Italy, Spain, and American wine regions. The program has received Wine Spectator’s Best of Award of Excellence for three consecutive years, with expert sommeliers guiding pairings to complement the seasonal cuisine. The craft cocktail menu showcases specialty drinks created with premium spirits and house-made infusions that capture seasonal essence, from bright summer refreshments to rich winter warmers. Each beverage offering is designed to enhance the dining experience and reflect the same precision found in the culinary preparations. The modern farmhouse-style space was designed through collaboration with Thunderbowl Architects, Burlingame Construction, Advantage Design Partners, and Kristin Dittmar Design, resulting in an environment that blends modern elegance with rustic charm and offers both indoor seating and outdoor al fresco dining options.
