Pollinator Chocolate operates a bean-to-bar chocolate factory and tasting room at 786 Highway 133 on the edge of Carbondale, where the entire chocolate-making process is visible through a glass wall separating the production floor from the seating area. Guests can watch beans move through roasting, stone grinding, and hand-molding while sitting in the attached cafe, which also functions as an espresso bar and evening lounge under the name Cocoa Club. Pollinator Chocolate pairs its chocolate program with coffee from Seattle’s Broadcast Coffee, along with bonbons, locally made pastries, and ice cream from Third Bowl.
Pollinator Chocolate was founded in 2019 by Mark Burrows, a local beekeeper and former audiovisual technician whose interest in craft chocolate grew from years of seeking out small-batch bars before he began sourcing his own cacao and studying chocolate making formally through Ecole Chocolate and the Fine Chocolate Industry Association. That beekeeping background shows up directly in the product line, most notably in the Bee Pollen Bar, made with Western Colorado pollen and edible flowers, and the Honey Crack bar, one of the shop’s best-selling items. For single-origin bars, Pollinator Chocolate follows a strict two-ingredient approach using only organic cacao and organic sugar, leaving out emulsifiers, lecithin, and vanilla so the flavor of each bean origin comes through unaltered. Cacao is sourced through importers that guarantee fair labor practices and living wages to farming communities, and packaging throughout the business is plastic-free, recyclable, or compostable.
Pollinator Chocolate is open for dessert and drink service, with alcohol pairings available alongside its chocolate offerings, including craft cocktails, beer, wine, and dessert flights built around the shop’s bonbons and bars. Takeout is available for guests who want to bring bars or truffles home rather than staying for the cafe experience.
