Rock Island Oyster Bar and Grill is a coastal-inspired restaurant and bar in Snowmass Village, Colorado, blending the flavors of land and sea to create a distinctive dining experience in the Rocky Mountains. Located in the heart of the Snowmass Mall just above Gorsuch and steps from the Coney Express chairlift, the restaurant is named after the Double Black Diamond extreme ski run on Snowmass Mountain. The concept draws inspiration from coastal restaurants in Long Beach Island, New Jersey, where two of the owners grew up.

Rock Island Oyster Bar and Grill is open daily with kitchen service from 10:00 AM to 9:00 PM and bar service until midnight. The menu features coastal cuisine and mountain fare including fresh oysters, clam chowder, lobster, caviar, and sandwiches, all prepared with high-quality ingredients sourced through relationships with local community producers. The restaurant is dedicated to the flavor, quality, and health of every element in its dishes, offering guests diverse and unforgettable meals made with locally sourced ingredients when possible.

Chef-Owner Jacob Burkhardt discovered his love for cooking while working in restaurants around his hometown of Ooltewah, Tennessee, outside of Chattanooga. He completed culinary studies at Johnson and Wales University including an externship at Castello di Gabbiano in Tuscany, Italy, which sparked his appreciation for seasonality and locality of ingredients. Burkhardt has worked extensively across major cities including Manhattan, Aspen, Vail, Las Vegas, San Francisco, Napa Valley, and Charleston. Most recently, he served as Chef de Cuisine at the Village Pub in Woodside, California with the Bacchus Restaurant Group, where he held a Michelin Star for 2020 and 2021.

Rock Island Oyster Bar and Grill features live entertainment catering to music enthusiasts, with a calendar of performances ranging from intimate solo sets by local talents to energetic touring bands across various genres. The venue also hosts open mic nights, karaoke, parties, and special events.
